As you might have probably seen on my Instagram @quitealooker, I decided to continue my sugarfree regime this month as well! A few weeks back I shared with you my recipe for raw energy bites and today I will continue with the sugarfree desserts – a super fast and delicious recipe on how to make an autumn version of chia pudding. The base of the chia pudding is universal, you just need to pick the milk you want to use. As for the toppings, it’s again your choice and depends on your taste. You can add fresh fruit or like me try a different approach with roasted apples or pumpkin.
This chia pudding is perfect for a fast, healthy breakfast or a dessert. Its texture is super chewy and slimmy and you can really play with the flavours! Read the full recipe below!
Coconut chia pudding with roasted applesPrint This
- 1/4 cup chia
- 1 & 1/2 cup coconut milk
- 2 tbsp honey
- 4 peeled roasted apples
- 10 walnuts
- 10 soaked raisins
- 1 tsp vanilla powder
- 1 tsp cinnamon
Mix the coconut milk, chia and honey in a container and leave in the fridge to chill for at least 4-5 hours. I prefer to leave it overnight and eat the pudding in the morning. If you don’t like coconut milk, you can also switch it with almond, soy or cashew milk.
To finish the pudding, put in separate cups and add the topings on top – the vanilla, cinnamon, raisins, walnuts and the chopped roasted apple. You can also add more honey if you prefer a sweeter pudding. Enjoy!
